
A few weeks ago BV threw together THE MOST delicious stew. In the month since I was treated to the leftovers and demanded the recipe, I have made it three times. I strongly encourage you to spend the half hour it takes to throw it together:
Cook half a thinly sliced onion or shallot and 3 cloves of garlic in 3 tablespoons of lard (the best pork lard is available in the frozen fridge at Cookbook) or Olive Oil. Then add in 3 Boccalone spicy Italian sausages. Either chopped with the casing on or broken-up bits without casing. Brown the sausage. Add-in fresh oregano, a can of San Marzano tomatoes. Simmer for 15 minutes. Add a diced, dried red pepper, 6 chopped mint leaves, beef broth, salt, green cracked pepper, two bunches of spinach, 2 pinches of brown sugar. In the last 10 minutes add 1/2 cup of Bordeaux and simmer. I have had it with white rice, with pasta, and (initially leftover-style) with fried potatoes and a fried egg.
